MEET VALERIE

Urban Eggrolls Food Truck Founder

Valerie is owner of the Urban Eggrolls Food Truck and launched season 1 in 2024. She has been rolling traditional Filipino eggrolls since the age of eight. Usually made for family gatherings and special events, rolling lumpia is a team sport, and Valerie remembers preparing them alongside her mother and their Filipino friends, hands busily filling wrappers with savory ground beef and veggies, while talking and laughing their way through several hundred lumpia.

Valerie got the idea for Urban Eggrolls based on her lumpia always being a crowd pleaser for family and friends. Experimenting with and expanding the types of fillings for the lumpia resulted in even more crowd enthusiasm. Valerie loves to be able to share her culture and food with Urban Eggrolls’ customers.

Valerie holds a bachelor’s degree in Industrial and Systems Engineering and a master’s degree in Business Administration. Valerie’s previous food industry experience includes working as a swing manager for a national restaurant chain and is currently ServSafe and Ohio Department of Health certified as a Food Protection Manager.

Sustainability is important to Valerie, and she strives to minimize food truck waste utilizing compostable food trays and service items as much as possible. Utilizing the highest quality ingredients such as organic produce and pasture raised proteins when possible are also operational goals on the truck. 

MEET ELLA

Ella is Valerie's youngest daughter and is currently a college freshman majoring in biology. Being Filipino has expanded her love for dance because of all the ethnic performances she gets to work on each year. Ella enjoys working on the food truck and is so happy to bring her delicious Filipino food to the public!
