WHO IS LOLA?
"Lola", in the Filipino dialect of the Visayan Islands, is the word for "grandmother". Our lola is Nina, Valerie's mother, who came to the United States in 1970. Lola Nina has passed down her traditional recipes for lumpia, including her secret ingredients, to her daughter Valerie. Valerie has rolled thousands of lumpia with Lola over the years (as shown here rolling pre-food truck). Valerie is happy to continue the tradition and share it with Urban Eggrolls' customers.

Lola Nina's traditional recipes include the OG beef veggie and banana lumpia. Each family gathering and celebration included these lumpia as part of the meal. Hand crafted and small batch, lumpia meant a labor of love to celebrate with family and friends.
Over the years, Valerie has created her own additional contemporary fillings in the test kitchen, including shrimp veggie, avocado veggie, bacon avocado, pulled pork, cheeseburger, pepperoni pizza, Cuban, Rueben, Dubai chocolate, crab rangoon, banana Nutella, and pineapple cream cheese. Valerie enjoys testing out new fillings to add to the Urban Eggrolls' filling of the month offering.
Valerie's dad was of Slovak descent and a similar hand crafted and small batch food, the pierogi, was also a family staple food. Valerie enjoys making homemade pierogi with the OG fillings of potato and cheese but also likes to experiment with the fillings with this food as well.
